Tasty Tuesday – Chicken & Rice Casserole

This girl right here is one of my best friends! We’re more like sisters and we know enough on each other to embarrass each other until we’re in our 80’s!

That being said, she can flat out cook! I’m terribly picky but I LOVE her recipes. I laugh all the way through making them because she always sends me these crazy instructions on how to make stuff. I’ll just let you see for yourself. 🙂

Chicken and Rice Casserole!

I’ve been making this since I was about 10 years old. I can remember coming home from school and my mom would be cooking this and I loved the smell! Mmm! I don’t know if she showed me how to make it or if I just picked up on how she did it. She would boil a whole chicken and take all day to make it. I came along and figured out how to make it the faster way haha I could seriously make this in my sleep!

Step one: buy your ingredients!

1. White or brown rice, whichever you prefer
2. Two cans cream of chicken soup
3. Chicken
4. Celery
5. Onion
6. Slivered Almonds
7. Butter
8. Rice cereal
9. Block of cheddar cheese

Chop half the onion. Then chop 2 celery stalks.

I’m using chicken tenders but use whatever you want. Now salt & peppa dem babies! This is where I take a short cut, I cook it in the microwave for 8-9 minutes or until cooked through.

Now, when you hear a big loud POP in you’re microwave…don’t freak out…just means the darn chicken has exploded!!!!!! Oh who cares…just move along!

Cook and drain your rice! I could live off of rice.. Shred ya some cheeeese!! About 2 cups or so.

After your chicken has cooled enough to handle, go ahead and chop it up!

Mix the celery, onion, 2-3 Tbsp of the slivered almonds, chicken and 1/4 c. Cheese and rice with the two cans cream of chicken soup!

Now, mix 2 cups of the rice cereal with the remaining cheddar cheese and 1 whole stick of butta! Yeah I said a whole stick. Just hush, close ya eyes and do it!

Put everything into a casserole dish like so!

Bake it in the oven at 350 for 30 minutes or until hot and bubbly.

And here is your end result!! It’s beautiful and tastes even better!
